Retro cool

Isn't it funny that old suitcases have become SO cool now days that even op-shops have realised it and are charging ridiculous amounts for them, let alone somewhere like Camberwell Market which last time I checked had a small 30cm old suitcase for about $25.

We happened to be discussing this at the market last week and lucky me look what I spotted at our local op-shop, hidden behind the counter. The old lady asked.."Which one love, that old make-up case?" ummmmm "YES", "Two dollars love". "I'll take it thanks" (yeepeeee)

and to make our day a little bit more exciting, a genuine cabbage patch doll for an incredible $3,
and a couple of goodies for a lovely lady, which I will hopefully see next Saturday.
So all in all a good oppie experience.

Blueberry Pikelets

It's been a while since the camera has come out to play so I thought it's time for a recipe.
Now there are a few recipes I have in mind to try, but today I thought I'd make the kids some pikelets...very, very simple to make and you probably have all the ingredients in your pantry & fridge.

It is also kid friendly, the mixing part, and any excuse really to try out our gorgeous gift, from a beautifully thoughtful lady!

Blueberry Pikelets

ingredients
  • 2 cups (300g) self raising flour, sifted
  • 1/2 cup (110 g) caster sugar
  • 3 eggs
  • 30g melted butter
  • 1 cup buttermilk
  • 1 teaspoon vanilla
  • 1 cup (160g) frozen blueberries **method
  • place flour, sugar, eggs, buttermilk*, butter, vanilla in a bowl and stir to combine. Let your mixture stand for about 10 minutes
  • heat a non-stick fry pan with some spray oil, on low heat and spoon tablespoonfuls of the mixture and cook for about 3 minutes or until bubbles appear on the surface then flip and cook for another 3 minutes
  • serve with extra blueberries, butter, whipped cream, maple syrup...whatever you feel like
* reminder on how to make buttermilk
** if you don't have blueberries, just leave them out or add something else
and make sure you have fun making them!

I ♥ Blossoms

I love walking down the street to see blossoms popping up everywhere, I love their gorgeous pink and white hues, I love that they make everything look so dainty, I love how they dance in the wind, I love how they seem to glow under a gorgeous blue sky and I love that spring is nearly here.How about you?

If you are in Melbourne and have Saturday free then why not pop into the Queen Victoria Women's Centre for some entertainment, exhibitions and see some stalls run by women in microbusinesses.
I will be there as well as the lovely Ms Curlypops so hope you can come by and say hi.

Thank you for your caring comments and for taking the time to send me a quick email, I really do appreciate it even though I haven't been able to reply back to you.
It's been a hard week for the family and we have to deal with some devastating news but we are dealing with each day as it comes.
We unfortunately can't change what is happening which makes me want to remind everyone out there to enjoy moments with your loved ones and to enjoy the little things that make you smile.

Thank you once again for your sweet, sweet words and please do visit once I get back to a little normality. I'm sorry if I haven't been able to visit you in your blogworlds but I will be back.

Day 6 : Do you remember the last time you had this much fun!

Sometimes life just gets in the way and we forget to take time out and enjoy the little things that make us smile.

Seeing this photo just made me realise that kids know something we grownups don't.
I don't know about you but the dishes and the clothes that need to be folded can wait, I'm going to remember how to laugh like that again...

I ♥ Red Velvet Cupcakes

I have seen these wonderful red cupcakes pop up in different places over the internet so I definitely HAD to try them.We made some for our neighbour as a thank you for helping us out and also used the same recipe for the little man's birthday cake.  
A few tips, these cupcakes do tend to rise a bit...as I found out, so don't fill your cupcake papers too high, maybe 2/3 full. I didn't add cocoa but I think I will next time.
I also didn't have any buttermilk on hand so I just made my own which is 1 tablespoon of vinegar in a cup and then fill up to 1 cup with milk, set aside for about 10 minutes at room temperature and that's your buttermilk.

Red Velvet Cupcakes  

Ingredients
  • 2 1/2 cups self- rising flour, sifted
  • 1 1/2 cups sugar
  • 1 1/2 cups vegetable oil
  • 2 eggs, room temperature
  • 2 1/2 tablespoons red food colour
  • 1 teaspoon pure vanilla extract
  • 1 cup buttermilk
  • 1 1/2 teaspoons baking soda
  • 2 teaspoons white vinegar

  • Preheat oven to 180/350. Line cupcake tins

  • In a medium bowl, sift together flour and baking soda. Set aside

  • Combine sugar, vegetable oil, eggs, vinegar, and vanilla. Beat until light and fluffy, about 2 minutes. Gradually add flour mixture, and mix on low speed just until flour has been incorporated. Slowly add buttermilk. Add food colouring, and beat to combine  
  • Divide batter amongst cupcake tins, remember, only about 2/3 full. Bake until a cake tester inserted into the middle comes out clean, about 18-20 minutes  
  • When completely cooled, ice with cream cheese frosting.

Ingredients

  • 150g butter, room temperature
  • 250g cream cheese, room temperature
  • 3 cups icing mixture, sifted
  • 1 teaspoon pure vanilla extract

method


  • Beat butter and cream cheese until well combined. Add vanilla and sift in 1 cup of icing mixture and beat until combined. Then sift in the remaining sugar and mix until smooth and thick, about 8 minutes.
