Blackberry picking


We went blackberry picking again and came home and made you a cake.


Blackberry Cake


ingredients
  • 2 eggs
  • 40ml olive or vegetable oil
  • 100g caster sugar
  • zest of one lemon
  • 1 cup buttermilk*
  • 300g plain flour
  • 2 1/2 teaspoons baking powder
  • fresh blackberries or any other fresh berries
  • raw sugar for sprinkling
method
  • Preheat oven to 190C/170C fan, grease and line with baking paper a 25cm square tin or 30cm rectangular tin
  • whisk eggs until light and fluffy, add oil sugar and lemon zest and keep whisking for another few minutes, then add buttermilk and continue whisking until well combined
  • sift in the flour and baking powder and just mix until combined
  • pour into prepared tin and gently scatter over blackberries until cake is covered
  • sprinkle with raw sugar and bake for 30-35 min and test with a skewer
* how to make buttermilk : 1 tablespoon of vinegar in a cup and then fill up to 1 cup with milk, set aside for about 10 minutes at room temperature

Ok I am officially declaring this as *The Best Cake Ever*.
And to think a third of our back yard was blackberries when I was little. I ODed on them, but I seriously want to eat them again now....in that cake!!

oh i wish! i love blackberries and that cake looks delicious! i love the shot of your littlest with the bucket of berries. her expression is so sweet and i love her little headband, shirt and red belt. super cute!

oh just so gorgeous Cathie - put the kettle on, I'll have two helpings!!! Isn't it lovely getting out and picking our own berries or fruit. When we went cherry picking a few months ago, i loved watching my kids just thrive on the nature of it!

Stopping by for the first time from Tink's place. This recipe looks amazing! I love blackberries! I used to have a wonderful thorn-less blackberry plant the produced the biggest berries. Over the years it lost its stamina and I foolishly pulled it out.(shame on me).
